IN VITRO ASSESSMENT OF SEROTONIN BIOACCESSIBILITY FROM FOODS AND SUPPLEMENTS IN MALE REPRODUCTIVE HEALTH

Serotonin, a nutrient component, has been found to positively influence sperm motility and spermatogenic processes. In this study, the digestion and bioaccessibility of serotonin-rich foods, including 10 different foods and a serotonin supplement, were examined through in vitro models. The experiment was conducted using in vitro digestion models, and the obtained data were analyzed using the HPLC method. The serotonin content varied between 205 mug/100 g to 5.8 mug/100 g before digestion and 294.3 mug/100 g to 14 mug/100 g after digestion, while the bioaccessibility ranged from 1101% to 8%. The findings showed that most food samples had high serotonin bioaccessibility and that the serotonin levels varied before and after digestion. Most food samples showed serotonin bioaccessibility to be above 100%. The findings demonstrated that most food samples had high serotonin bioaccessibility and that the amount of serotonin varied before and after digestion.
